Ingredients

1 lb (450g) ground beef
1 small onion, diced
2 cloves garlic, minced
1 tbsp chili powder
1 tsp cumin
½ tsp paprika
Salt and pepper to taste
4 low-carb tortillas
1 cup enchilada sauce (no sugar added)
1 cup shredded cheese (cheddar or Mexican blend)
Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, cook onion and garlic until soft. Add beef and cook until browned. Stir in chili powder, cumin, paprika, salt, and pepper.
  3. Spoon beef mixture into tortillas, roll them up, and place seam-side down in a baking dish.
  4. Pour enchilada sauce over the top and sprinkle with cheese.
  5. Bake for 15–20 minutes, until bubbly and cheese is melted.
  6. Garnish with fresh cilantro and serve hot.
