A rich, creamy, and utterly comforting low-carb broccoli cheese soup made without flour. Perfect for keto diets and ready in 35 minutes.

Ingredients

2.5 cup chopped broccoli
3 ounce shredded carrots
1/2 diced onion
3 clove chopped garlic (sub for 1 TB minced garlic)
2 tablespoon butter
1 cup savory vegetable broth
1/2 cup heavy cream
4 ounce full fat cream cheese
1 cup shredded sharp cheddar cheese (112g weighed out)

Instructions

  1. Dice onion and chop broccoli finely.
  2. In a large pot on medium-high heat, melt butter and sauté diced onion until fragrant. Add garlic.
  3. Pour in savory vegetable broth, lower heat to a simmer. Add cream cheese and heavy cream, stirring until smooth.
  4. Add chopped broccoli and carrots. Bring to a simmer, cover, and cook until broccoli is tender (8-10 mins).
  5. Reduce heat to low. Add shredded cheddar cheese, stirring until melted. Season with salt and white pepper to taste. Serve hot.

Notes

  • For a smoother soup, use an immersion blender before adding the cheddar.
  • Reheat gently on the stovetop to prevent the dairy from separating.
  • You can use a blend of cheeses like cheddar and Monterey Jack.
