A quick and delicious low-carb treat featuring creamy cheese filling, sweet blueberries, and a crispy keto tortilla shell, perfect for breakfast or dessert.

6 Zero-Carb Small Keto Tortillas
1/3 cup Fresh Blueberries
6 ounces Cream Cheese
2 tbsp Plain Greek Yogurt
1 tsp Vanilla Extract
2 tbsp Butter (melted)
3 tbsp Swerve Confectioners’ Sugar Substitute (plus additional for dusting)

Instructions

  1. Preheat the air fryer to 375 degrees.
  2. Add the cream cheese, yogurt, vanilla and Swerve to a mixing bowl, and blend until smooth and creamy.
  3. Spread a layer of the cream cheese mixture down the center of each tortilla.
  4. Top the cream cheese layer with fresh blueberries.
  5. Roll the tortillas closed around the filling, and place seam side down into a well greased pan or rack.
  6. Brush the top of the tortillas with the melted butter.
  7. Cook for 8-10 minutes, or until browned and crispy on the outside.
  8. Dust with more Swerve before serving.

  • For extra crispiness, ensure the air fryer is fully preheated.
  • Use fresh blueberries for best results, as frozen may release excess moisture.
  • Leftovers can be stored in the fridge and reheated in an air fryer or toaster oven to maintain crispness.
