A crispy, cheesy, low-carb homemade version of the fast-food favorite, packed with seasoned beef, a creamy cheese sauce, and fresh toppings, all ready in 30 minutes.

2 tablespoons Unsalted Butter
4 ounces Cream Cheese (dairy-free alternative ok)
1/4 cup Heavy Whipping Cream (or coconut cream)
1 cup Shredded Sharp Cheddar Cheese
1 pound Ground Beef (or ground chicken/turkey)
2 tablespoons Taco Seasoning
4 Low-Carb Tortillas (e.g., Mission Carb Balance)
1 cup Sour Cream (or Greek yogurt)
1 cup Shredded Lettuce
1 medium Tomato, diced
1 cup Extra Shredded Cheddar Cheese
1/4 cup Fresh Cilantro, chopped
1/2 cup Jalapeño Slices (optional)
1 tablespoon Olive Oil

Instructions

  1. Make Cheese Sauce: Melt butter, whisk in cream cheese and cream until smooth. Stir in cheddar cheese until melted. Set aside.
  2. Cook Beef: Brown ground beef in oil. Drain fat, add taco seasoning and a splash of water. Cook 1-2 min. Set aside.
  3. Crisp Tortillas: Warm each tortilla in a dry skillet for 30-45 sec per side until pliable and lightly spotted.
  4. Assemble: On each tortilla, layer cheese sauce, beef, sour cream, extra cheese, lettuce, tomato, cilantro, and jalapeños.
  5. Fold & Cook: Fold edges of tortilla up over filling to form a hexagon shape. Cook folded-side down in skillet for 2-3 min until golden. Flip and cook other side for 2-3 min.

Notes

  • For a baked finish, sear in a skillet then bake at 400°F for 5-7 mins.
  • Use dairy-free substitutes for a vegan version.
  • Prep filling and sauce ahead for quicker assembly.
  • Serve immediately for the crispiest texture.
