4 medium zucchinis (Halved lengthwise and scooped out to create ‘boats.’)
1 pound lean ground beef
1 small onion (Diced)
2 cloves garlic (Minced)
1 cup tomato sauce
1 cup shredded cheese (Mozzarella, cheddar, or parmesan)
1 tablespoon olive oil
1 teaspoon Italian seasoning
1/2 teaspoon paprika
Salt & pepper to taste

Instructions

  1. Step 1: Prepare the Zucchini: Preheat oven to 400°F. Halve zucchinis lengthwise, scoop out center flesh (chop and reserve). Salt insides, let sit, then pat dry. Place on baking sheet.
  2. Step 2: Cook the Beef Filling: Heat oil in skillet. Cook onion until soft, add garlic. Add ground beef, cook until browned. Drain fat. Add reserved zucchini, tomato sauce, and seasonings. Simmer 5 mins.
  3. Step 3: Assemble & Bake: Fill zucchini boats with beef mixture. Top with shredded cheese. Bake for 18-22 mins until zucchini is tender and cheese is golden.
  4. Step 4: Serve & Enjoy: Let cool 5 mins. Garnish with fresh herbs if desired. Serve immediately.
