A creamy, comforting soup with chicken sausage, sun-dried tomatoes, and kale made quickly in your Instant Pot.

Ingredients

3 lb (1.4 kg) Chicken Sausage with Italian seasonings, casings removed
1 Large Onion, chopped
6 Cloves Garlic, minced
1 Tbsp Dried Oregano
1 Cup Sun-dried tomatoes, drained and sliced
Salt & Pepper to taste
12 Cups Chicken Broth
1 Bunch Kale, de-stemmed and sliced thin
1 Cup Heavy whipping cream

Instructions

  1. Select ‘Sauté’ on Instant Pot. Add sausage, break up, cook until browned.
  2. Drain excess fat if needed. Add onion, cook until soft.
  3. Add garlic, oregano, sun-dried tomatoes, salt, pepper. Sauté 1 min.
  4. Pour in broth. Secure lid, set vent to ‘Sealing’. Pressure cook on High 5 min.
  5. Quick release pressure. Stir in kale until wilted.
  6. Stir in cream until heated through. Season to taste. Serve with Parmesan.

Notes

  • For dairy-free, substitute heavy cream with full-fat coconut milk.
  • Vegetarian version: use plant-based sausage and vegetable broth.
  • Soup thickens when stored; thin with broth when reheating.
  • Freezes well for up to 3 months.
