2 cups freshly shredded cheddar cheese
1 large egg
2 tbsp almond flour
seasoning to taste (e.g., garlic salt)

Instructions

  1. Cook broccoli rice per package. Drain and squeeze out all excess liquid; cool.
  2. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  3. In a bowl, mix cooled broccoli, cheese, egg, almond flour, and seasoning.
  4. Form 16 small balls, place on sheet, and flatten slightly.
  5. Bake for 15 min until browning, flip, then bake 8-10 min more until crispy.
