Soft, thick, and perfectly sweet keto peanut butter cookies made with just a handful of clean ingredients. Only 64 calories and 1.5g net carbs per cookie.

Ingredients

1/2 cup peanut butter, or nut butter of choice
1 tbsp milk of choice
2/3 cup finely ground almond flour
3 tbsp powdered erythritol or powdered sugar
1/8 tsp salt
1/8 tsp baking soda

Instructions

  1. If not already easily stir-able, gently heat nut butter until runny.
  2. Preheat the oven to 325 F.
  3. Stir dry ingredients (almond flour, sweetener, salt, baking soda) very well.
  4. Stir in nut butter and milk to form a dough.
  5. Roll dough into balls, then flatten into thick cookies.
  6. Bake on the center rack for 10 minutes.
  7. Take out when still slightly undercooked.
  8. Let cool completely on the baking sheet.

Notes

  • Cookies will be fragile when hot but firm up perfectly as they cool.
  • Store in an airtight container for up to 5 days.
  • For a flavor twist, add a few drops of vanilla extract or sugar-free chocolate chips.
