A deconstructed, keto-friendly take on the classic Reuben sandwich. Savory corned beef, melted Swiss cheese, and wilted coleslaw are drizzled with a tangy, sugar-free dressing for a quick and satisfying one-skillet meal.

Ingredients

One bag of coleslaw mix
1 pound corned beef cut into strips
23 tbsp butter
1 cup Swiss cheese
Scallions
1 cup mayonnaise
1/4 cup sugar free ketchup
4 tsp horseradish
1 tsp hot sauce
1 tsp Worcestershire sauce
1/2 tsp salt
Pinch of pepper

Instructions

  1. Melt butter in a skillet over medium heat until foamy.
  2. Add corned beef strips and sauté covered for about 5 minutes until heated through.
  3. Layer coleslaw mix on top of the corned beef, cover, and cook for another 5 minutes until slightly wilted.
  4. Stir the mixture together and top with Swiss cheese. Cover to melt or broil until bubbly.
  5. Drizzle with dressing made from mayonnaise, sugar-free ketchup, horseradish, hot sauce, Worcestershire sauce, salt, and pepper. Garnish with scallions before serving.

Notes

  • Ensure Worcestershire sauce is a halal-certified brand. For a crispier cheese topping, broil for 1-2 minutes. Store dressing separately for best leftovers.
