Juicy chicken breasts stuffed with a creamy, garlicky spinach and cheese filling, baked to golden perfection for an easy yet impressive healthy dinner.

4 chicken breasts
1 tablespoon olive oil or avocado oil
1 teaspoon paprika
1 teaspoon salt (divided)
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
4 ounces cream cheese (softened)
1/4 cup grated Parmesan
2 tablespoons mayonnaise
1 1/2 cups chopped fresh spinach
1 teaspoon garlic (minced)
1/2 teaspoon red pepper flakes

Instructions

  1. Preheat oven to 375 degrees F.
  2. Place chicken breasts on a cutting board and drizzle with oil.
  3. In a small bowl, combine paprika, 1/2 teaspoon salt, garlic powder, and onion powder. Sprinkle evenly over both sides of chicken.
  4. Use a sharp knife to cut a horizontal pocket into the thick side of each chicken breast. Set aside.
  5. In a mixing bowl, combine cream cheese, Parmesan, mayonnaise, spinach, minced garlic, red pepper flakes, and remaining 1/2 teaspoon salt. Stir well.
  6. Spoon the spinach mixture evenly into each chicken pocket.
  7. Place stuffed chicken breasts in a 9×13 baking dish. Bake, uncovered, for 25-30 minutes or until chicken is cooked through (internal temperature of 165°F).

  • For best results, ensure cream cheese is fully softened for a smooth filling.
  • Use a meat thermometer to avoid overcooking the chicken.
