8 ounces cream cheese, softened
0.5 ounces freeze dried strawberries (45 pieces)
1/2 teaspoon vanilla extract
1 teaspoon monk fruit sweetener

Instructions

  1. Allow cream cheese to come to room temperature or microwave briefly to soften.
  2. Pulse freeze-dried strawberries in a blender until a fine powder forms.
  3. In a medium bowl, combine all ingredients and mix until smooth and uniform.
  4. Scoop mixture and form into bite-sized balls. Place on a plate.
  5. Chill in refrigerator for 20 minutes to set. Store in an airtight container in fridge or freezer.

Notes

  • For fresh strawberries, use 6-7, pat them very dry, and chop finely.
  • Any powdered keto sweetener can be substituted for monk fruit.
