Crispy, gluten-free zucchini fritters made with almond flour and parmesan, perfect as a snack or side.

Ingredients

4 medium zucchini
1 tablespoon salt (divided)
4 scallions (thinly sliced)
2 large eggs (beaten)
1 cup almond flour
1 teaspoon baking powder
1/4 cup parmesan cheese (freshly grated)
2 tablespoons oil

Instructions

  1. Finely grate zucchini into a bowl, add half the salt, and set aside for 10 minutes.
  2. Squeeze out all excess moisture from the zucchini until dry.
  3. Add scallions, eggs, almond flour, baking powder, and parmesan cheese; mix well.
  4. Heat oil in a non-stick pan over medium heat. Add spoonfuls of batter, press into discs, and fry 2-3 minutes per side until golden.
  5. Place fritters on a wire rack to drain excess oil.

  • Ensure zucchini is thoroughly dried to avoid soggy fritters.
  • Use a clean dish towel for best moisture removal.
  • Fry at medium heat to prevent burning.
